Pumpkin cookies with all your favorite pumpkin pie flavors are sure to receive rave reviews!
Heat oven to 350°F.
Combine butter, brown sugar and sugar in bowl. Beat at medium speed, scraping bowl often, until creamy. Add pumpkin, egg and vanilla. Continue beating until well mixed. Add flour, 1 1/2 teaspoons pumpkin pie spice, baking powder, baking soda and salt. Beat, scraping bowl often, until well mixed. Stir in 1 cup walnuts.
Drop rounded teaspoonfuls of dough, 2 inches apart, onto ungreased cookie sheets. Bake 8-10 minutes or until set. Cool completely.
Combine all frosting ingredients except walnut pieces in medium bowl. Beat at low speed, scraping bowl often, until smooth. Frost cooled cookies. Garnish with walnuts, if desired.
*Substitute canned pumpkin.

These cookies were delicious and very moist. The frosting really complements them. I added chopped pecans on top of the frosting. These cookies remind me of the pumpkin roll. Will be making them again for a holiday party at work.
I needed to bake some cookies for an event and happened to have a can of pumpkin that needed using as it was getting close to the "sell by" date. I checked the internet for pumpkin/walnut cookies and up came this wonderful Land O' Lakes site. I used the Pumpkin Walnut Cookies recipe and first loved the clearly printed double spaced ingredient page. It was so easy to follow. They came out just great! ...like little cakes with the soft middle. Although they are to give away, I sampled a few. Delicious. Today in searching to write this, I saw so many other things I can bake with pumpkin. I LOVE the Land O' Lakes weblite with the colorful pictures of the finished products. I will visit often as it is a trusted brand for many years. Thank you for this great find!
I use black walnuts for these delicious moist cookies. Everyone loves them!! The spice in the frosting adds a special touch also.
I found this recipie years ago in a Land o Lakes paper cookbook. My family loves them. They litteraly disappear from the cookie jar. They are easy and quick to make. Try them, yoy won't be disappointed.

Super easy. Turned out fluffy & delish. I used choc chips instead of walnuts for the actual cookie. Still used walnuts as garnish. Great combo!

Soft like a little bite of pumpkin cake! I topped the frosting with a shake of cinnamon and a few chocolate chips! These melt in your mouth..

I made these with semi sweet chocolate chips and they were delish. I don't know why but they were even better the second day. Must be the flavors had a chance to meld together. Very cakelike but I liked them that way.
very flavorful and easy to make.Great basic ingredients. I like to substitute chopped hazelnuts instead of walnuts.
