Butterscotch pudding mix adds richness to this oatmeal apple dessert.
Heat oven to 375°F.
Combine all ingredients except apples and ice cream in bowl. Beat at medium speed, scraping bowl often, 2-3 minutes or until mixture resembles coarse crumbs.
Combine apples and 1/2 cup crumb mixture in greased 8-inch square glass baking pan. Sprinkle with remaining crumb mixture. Bake 35-40 minutes or until apples are fork tender.
Serve warm with ice cream, if desired.
*Substitute 1 (3 5/8-ounce) package vanilla-flavored pudding and pie filling mix.

Yummy, the whole family loved it.
I made this for company and everyone loved it! It was very simple to make. I substituted chopped cashews for the pecans, and served it with vanilla ice cream and warm caramel sauce. Even without the caramel, you couldn't really taste the butterscotch pudding in the topping mixture, although it did enhance the texture of the topping mixture. I will make this again!
