Winter dinner recipe that's perfect in the slow cooker and table ready at supper time.
Place bacon, chopped onions and beef roast pieces in 4-quart saucepan. Cook over medium-high heat, stirring occasionally, 8-10 minutes or until bacon and beef are browned. Stir in parsley, apple juice, broth, tomato paste, bay leaves, garlic, salt, pepper and thyme.
Place potatoes, carrots, onions and mushrooms in 4- to 5-quart slow cooker; add meat mixture. Cover; cook on Low heat setting 8-10 hours, or High heat setting 4-5 hours or until meat is fork tender. Remove bay leaves; stir mixture before serving.

This is the best stew ever. I made it with pork and it was great. We use to have a land of lakes cookbook, but it was lost during our last move. I was soooooo happy that I found your site and this much loved recipe!

this is a rich warm, wonderful stew... I make it on snow days, sad days and days we need to feel warm and fuzzie!!!
Wonderful winter meal. I also make it in a cast iron dutchoven- I like it better that way- I got the recipe out of one of the LandoLakes cookbooks. It has such a unique and yummy flavor.

It takes a while to make, but it's well worth the effort.
