Winter Warm-Up Beef Simmer

Winter dinner recipe that's perfect in the slow cooker and table ready at supper time.

6 slices bacon, cut into 1/2-inch pieces
2 medium (1 cup) onions, chopped
1 (3-pound) beef chuck roast, trimmed, cut into 2 1/2-inch pieces
1/2 cup chopped fresh parsley
1/2 cup apple juice
1/2 cup beef broth
1 (6-ounce) can tomato paste
2 bay leaves
1 teaspoon finely chopped fresh garlic
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon dried thyme leaves
4 medium red potatoes, halved
3 medium carrots, cut into 1-inch pieces
2 medium onions, halved
1 (8-ounce) package fresh mushrooms, halved


Place bacon, chopped onions and beef roast pieces in 4-quart saucepan. Cook over medium-high heat, stirring occasionally, 8-10 minutes or until bacon and beef are browned. Stir in parsley, apple juice, broth, tomato paste, bay leaves, garlic, salt, pepper and thyme.

Place potatoes, carrots, onions and mushrooms in 4- to 5-quart slow cooker; add meat mixture. Cover; cook on Low heat setting 8-10 hours, or High heat setting 4-5 hours or until meat is fork tender. Remove bay leaves; stir mixture before serving.

Wonderful winter meal. I also make it in a cast iron dutchoven- I like it better that way- I got the recipe out of one of the LandoLakes cookbooks. It has such a unique and yummy flavor.

Delicious. It smelled so good cooking that even our house vegetarian temporarily reneged and had a bowl.
My family loves this dish! It is great on those bone chilling cold days. Great for family get togethers.
It takes a while to make, but it's well worth the effort.
This was an easy meal to toss together in the morning and have waiting when I got home. It was every bit as tasty as promised
