All-time favorite caramel rolls or the goodness of frosted orange rolls--both from the same recipe.
Combine 2 cups flour, warm milk, 1/2 cup butter, sugar, yeast, eggs and salt in bowl. Beat at medium speed, scraping bowl often, until smooth. Stir in raisins and enough remaining flour to make dough easy to handle.
Turn dough onto lightly floured surface; knead 3-5 minutes or until smooth and elastic. Place into greased bowl; turn greased-side up. Cover; let rise in warm place 1-1 1/2 hoursuntil double in size. (Dough is ready if indentation remains when touched.)
Punch down dough. Stir together all filling ingredients except cinnamon in bowl. Spread half of filling onto bottom of greased 13x9-inch baking pan. Stir cinnamon into remaining filling.
Roll out dough on lightly floured surface into 18x9-inch rectangle; spread with remaining filling. Roll up, jelly-roll fashion, beginning with 18-inch side; seal seams well. Cut into 18 (1-inch) slices using serrated knife; place slices in prepared pan. Cover; let rise 1 hour or until double in size.
Heat oven to 375°F.
Bake 20-25 minutes or until golden brown. Immediately invert pan onto serving platter; remove pan.

I made these rolls yesterday and they are delicious! I did add some maple flavoring to the dough and to the filling plus I added some whipping cream (not whipped) to the filling because I thought it was not runny enough and I did not want it to turn hard after they were baked. The recipe is definitely a keeper! Make sure that you put the rolls in a deeper pan so that the filling does not bubble over on to your oven.
I used to have what I believe is this recipe in a land o lakes cookbook I purchased while in line at the Supermarket. I loved this recipe, I loaned my recipe to a neighbor who moved away and never returned it to me. Has been looking for a copy of it ever since and can not locate it. Hope this is it!
I started making both of these recipes to give as gifts to neighbors. For those who like nuts, I sprinkle 3/4 cup pecans over the Caramel sauce in the bottom of the pan and add about 1/4 cup ground pecans to the filling. For the Glazed Orange Rolls I add two tablespoons orange zest to the dough (I like a stronger orange flavor). Neighbors (young and old) love these rolls, I love these rolls.I also make the Glazed Orange rolls as well.
Whenever I make these, all you hear are the "oohs" and "aahs".
