Apple Butter

This old fashioned apple butter recipe tastes heavenly spread on pancakes, waffles or warm bread.

Ingredients

3 pounds (9 medium) tart cooking apples, peeled, cored, quartered
1/2 cup apple cider or apple juice
1 1/2 cups sugar
1/2 cup firmly packed brown sugar
1 1/2 teaspoons ground cinnamon
1/4 teaspoon ground allspice
1/8 teaspoon ground nutmeg
2 tablespoons cider vinegar

Directions

Place apples and apple cider in 4-quart saucepan. Cover; cook over medium heat, stirring occasionally, until apples are very soft (25 to 30 minutes).

Place apple mixture in food processor bowl fitted with metal blade or 5-cup blender container. Cover; process until smooth (1 to 2 minutes).

Return apple mixture to same pan; stir in all remaining ingredients. Cook over low heat, stirring often, until mixture is very thick (30 to 45 minutes).

Serve warm or cold on pancakes, waffles, toast or warm breads. Store refrigerated.

I doubled everything just becsuse I had a crockpot full. It was very tasty, tho I only put one cup of white sugar, and one cup of brown sugar my apples were sweet already and I did not want to ruin it by making it too sweet. Then I canned them using the waterbath method for 20 minutes. Now we can enjoy it for the winter months, I kept it in the crockpot for 6 hours on high to thicken it up.
I made this apple butter recipe for a family reunion. Everyone loved it and some said it reminded them of 'grandma's' butter. It was received so well, I was asked to make this for christmas presents. thanks land o lakes.
This was my first time making (and eating) apple butter. I followed the directions carefully, and it turned out great. It was very yummy.
