Skillet Chicken & Potato Dinner

Chicken breasts prepared with hearty vegetables makes a quick, low-sodium, weeknight meal.meal.

Ingredients

3 tablespoons Land O Lakes® Butter
6 new red potatoes, quartered
1 medium onion, cut into 6 wedges
1 teaspoon finely chopped fresh garlic
6 (4-ounce) boneless skinless chicken breast halves
1 (14-ounce) package frozen whole green beans*
Salt, if desired
Pepper, if desired
1/4 cup chopped fresh parsley, if desired

Directions

Melt butter in 10-inch skillet until sizzling; add potatoes, onion and garlic. Cook over medium-high heat, stirring occasionally, 12-14 minutes or until potatoes are browned. Remove from skillet. Keep warm.

Place chicken in same skillet. Cook over medium-high heat, turning once, 10-12 minutes or until lightly browned and no longer pink. Remove chicken from skillet. Keep warm.

Place potato mixture and green beans in same skillet. Cover; continue cooking, stirring occasionally, 6-9 minutes or until beans are crisply tender. Return chicken to skillet. Continue cooking, stirring occasionally, 1-3 minutes or until heated through. Season with salt and pepper, if desired. Sprinkle with parsley, if desired.

*Substitute 1 (10-ounce) package frozen cut green beans.

I made this last night added bacon before frying potaotes, tarragon and bay leave with chicken. It was over the top wonderful!!!
I added a little olive oil to butter so it wouldn't burn. Also added thyme, grainy mustard, two cloves of garlic and Franks hot sauce. Would definitely fix again with these additions.
This one is worth making, but it will take more time than it says IF you're making it for more than one person. I used red potatoes and sliced them thin so they would cook faster. Garlic salt gave it good flavor as well. I would make this again.
The prep was quick, took me much longer than 44 minutes to finish it. It was delicious! Will make it again using more butter, and I'd better flatten the chicken a little more. It won't probably take as long to cook once I'm used to it.
Quick and easy. Chicken was very moist. I will probaly use a little more garlic next time.
We just got done with dinner and had to post a review. This dinner was so easy to make and was delicious, even my picky 2 year old ate tonight. I also had to add extra butter and had to cut the potatoes a little smaller. To the previous poster, I use the keep warm option on my oven, it helps keep the food moist and tender. This has definantly been added to my weekly meal plan.
This is a big hit at my house!

I found that I need more butter than it calls for and it helps to flatten the chicken breasts to not quite a cutlet thickness to have it throughly cooked.
Excellent, with the singular exception of not knowing an easy way to "keep warm." Am sure I found the most difficult method, and would like some suggetions as to how to comply with this simple instruction of "keep warm.

I thought this meal was delicious. I am a young man who is beginning to explore the joys of cooking. This dish was truly a joy to prepare and eat. It was easy to do. Two things-I added more butter, at intervals to make sure the recipe cooked well and I added more herbs thyme and basil. I will be making this a part of my permanent recipe collection and hope to eat it again very soon. The slight crunch of the green beans, the melt in your mouth potatoes and the succulent chicken made for a quick and easy dinner delight!
This made a wonderful meal for my family. I did do a couple of things differently. After the chicken was cooked and before I readded the potato's onions and garlic back to the skillet I pored off all the chicken fat in the pan. I then readded the above items and because I didn't have green beans I used frozen green peas. Excellant meal.
Easy. My 16 year old loved this meal and enjoyed helping to make it.
