Mexican Confetti Squares

Great party-fare appetizers, these bite-sized appetizers of tortillas are layered with a flavorful cheese mixture.

Ingredients

1/2 cup fat free sour cream
1 (8-ounce) package light cream cheese, softened
4 ounces (1 cup) LAND O LAKES® Mozzarella Cheese, shredded
1 (2-ounce) jar diced pimientos, drained
2 tablespoons sliced green onions
2 tablespoons chopped mild green chiles, drained
2 tablespoons chopped ripe olives, drained
10 (8-inch) flour tortillas
Paprika or chili powder
Jalapeño pepper rings, if desired

Directions

Combine sour cream and cream cheese in small bowl. Beat at medium speed, scraping bowl often, until smooth. Stir in cheese, pimientos, green onions, chiles and olives.

Spread about 1/3 cup sour cream mixture over 1 tortilla. Top with another tortilla; spread with about 1/3 cup sour cream mixture. Repeat layering two more times ending with tortilla; wrap in plastic food wrap. Repeat with remaining tortillas and cheese mixture. Refrigerate at least 2 hours or overnight.

To serve, cut tortillas into 1-inch squares; sprinkle tops with paprika. Garnish with jalapeño pepper rings. Serve with toothpicks.
