Super Sloppy Subs
Seasoned Italian sausage is topped with shredded Mozzarella cheese and served on French rolls.
1 pound Italian sausage
1 medium (1/2 cup) green bell pepper, chopped
1 medium (1/2 cup) onion, chopped
1/4 cup ketchup
1 ((14.5-ounce) can diced tomatoes with basil, garlic & oregano,drained*
1 teaspoon Italian seasoning*
1/4 teaspoon garlic powder
4 French rolls or hoagie buns, split**
Combine sausage, green pepper and onion in 10-inch skillet. Cook over medium heat, stirring occasionally, until sausage is browned (10 to 15 minutes); drain off fat. Stir in ketchup, tomatoes and Italian seasoning. Increase heat to medium-high. Cook, stirring occasionally, until mixture thickens (5 to 7 minutes).
Heat broiler. Stir together butter and garlic powder in small bowl; brush on split rolls. Place rolls, cut-side up, onto ungreased baking sheet. Place 1/4 sausage mixture on bottom half of each roll; top with cheese.
Broil 3 to 5 inches from heat until cheese is melted (2 to 3 minutes). Place top half of each roll over bottom half.
*Substitute 1 (14.5-ounce) can diced tomatoes and 1 teaspoon Italian seasoning.
**Substitute hamburger buns.
MAKE-AHEAD TIP:Prepare and cook beef mixture ahead of time. Heat broiler at serving time. Continue as directed above.
MICROWAVE DIRECTIONS: Combine green pepper, sausage and onion in 1 1/2-quart casserole. Cover; microwave on HIGH (100% power), stirring after half the time, until sausage is no longer pink (7 to 9 minutes); drain off fat. Stir in ketchup, tomatoes and Italian seasoning. Cover; microwave on HIGH (100% power), stirring after half the time, until flavors are blended (3 to 6 minutes). Heat broiler. Assemble and broil sandwiches as directed above.
