Pork Chops Stuffed With Corn Salsa

Pork chops are filled with a southwestern-flavored corn filling in this easy grilled meal.

1/4 cup chopped fresh cilantro or parsley
1 medium (1 cup) red bell pepper, coarsely chopped
1/2 medium red onion, thinly sliced, separated into rings
1 (10-ounce) package frozen whole kernel corn, thawed, drained
2 tablespoons Land O Lakes® Butter, melted
2 tablespoons cider vinegar
1/2 teaspoon ground cumin
1/4 teaspoon salt
1/4 teaspoon coarse ground pepper


6 (1-inch thick) pork chops
Coarse ground pepper


Heat gas grill on medium or charcoal grill until coals are ash white. Meanwhile, stir together all stuffing ingredients in medium bowl; mix well. Set aside.

To prepare pork chops, split each pork chop from outer edges toward the bone, making a pocket. Place about 2 tablespoons stuffing mixture in each pocket. Sprinkle chops with salt and pepper.

Place pork chops onto grill. Grill, turning occasionally, until desired doneness (20 to 30 minutes). Serve remaining corn mixture over pork chops.
