Recipe Comments & Reviews

I used 3/4 cup of candied fruit and 3/4 cup mixed dried cranberries and golden raisins to soften it up. Also added the grated rind of 1 lemon for a bit more flavor. The texture on this cake is really nice. Definitely better the day after it is made.
I have made this several times. It's quick and easy to make. Very nice to have on hand in the freezer for unexpected drop-ins.
