Almond Strawberry Bars

Strawberry bars flavored with a touch of almond make these bars extra delicious.

Crumb Mixture

1 1/4 cups all-purpose flour
1/3 cup firmly packed brown sugar


1/2 cup all-purpose flour
1/2 cup firmly packed brown sugar
1/4 cup Land O Lakes ® Butter, softened
1/2 teaspoon almond extract


3/4 cup strawberry preserves


1/2 cup powdered sugar
1/2 teaspoon almond extract
1 to 2 teaspoons milk


Heat oven to 350°F.  Grease and flour 8-inch square baking pan; set aside.

Combine all crumb mixture ingredients in small bowl. Beat at low speed, scraping bowl often, until mixture resembles coarse crumbs. Press on bottom of  prepared pan.  Bake 20 minutes or until edges are lightly browned.

Meanwhile, combine all topping ingredients except preserves in same bowl. Beat at low speed, scraping bowl often, until well mixed; set aside.

Spread preserves to within 1/8 inch from edge of hot, partially baked crust; sprinkle with topping. Continue baking 20-25 minutes or until edges are lightly browned. Cool completely.

Combine powdered sugar and almond extract in small bowl. Stir in enough milk for desired glazing consistency. Drizzle glaze over bars.

These are really delicious. I've had numerous people ask for the recipe and even had a request for cookies from someone in the hospital to help brighten their spirits.
I followed the recipe exactly and it is awesome! My husband said they are his favorite cookie and that says something. :
Wonderful easy recipe. I substituted raspberry preserves for the strawberry. I made the bars for a graduation party and received many compliments.
This is a beautiful addition to put on a tray of cookies for the Christmas holidays, but excellent to eat anytime! I made it with seedless raspberry jam (in addition to having used the strawberry at other times) and it was really good, tasting similar to Linzer Cookies. It's one that my daughter asks for every Christmas now.
