Sun Honey Waffles

3 Land O Lakes® Eggs, separated
1 3/4 cups all-purpose flour
1/2 cup Land O Lakes® Butter, melted
2 tablespoons sugar
1 tablespoon baking powder
1/2 teaspoon salt
2 tablespoons honey
2 teaspoons freshly grated lemon zest


Maple syrup
Land O Lakes® Heavy Whipping Cream, sweetened, whipped, if desired
Fresh or frozen fruit (blueberries, strawberries, raspberries, etc.), thawed


Heat waffle iron to medium-high heat.

Beat egg yolks using whisk or rotary beater in bowl until light yellow color. Stir in all remaining waffle ingredients except egg whites just until moistened.

Beat egg whites in bowl at high speed, scraping bowl often, until stiff peaks form. Gently stir beaten egg whites into waffle mixture. Bake according to waffle iron directions or until golden brown. Repeat with remaining batter. Serve waffles with butter, syrup, whipped cream or fresh fruit, if desired.
