2 cups all-purpose flour
3/4 cup sugar
1 tablespoon freshly grated orange zest
1 teaspoon baking soda
1 teaspoon vanilla
1/2 teaspoon salt
1/4 cup orange juice
2 medium (1 cup) ripe bananas, mashed
1 cup sweetened flaked coconut
1 (3.25-ounce) jar (2/3 cup) macadamia nuts, coarsely chopped*
Heat oven to 350°F.
Combine all ingredients except bananas, orange juice, coconut and nuts in bowl. Beat at low speed, scraping bowl often, until well mixed.
Add bananas and orange juice. Continue beating, scraping bowl often, until well mixed. Stir in coconut and nuts. (Batter will be thick.)
Spread into 3 greased (5 1/2x3-inch) mini loaf pans. Bake 35-45 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pans. Cool completely.
*Substitute chopped walnuts.
This bread can also be baked in greased (9x5-inch) loaf pan. Bake 60-65 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pan. Cool completely.
