Adding macadamia nuts to a traditional banana bread gives it a taste of the tropics.
Heat oven to 350°F.
Combine all ingredients except bananas, orange juice, coconut and nuts in bowl. Beat at low speed, scraping bowl often, until well mixed.
Add bananas and orange juice. Continue beating, scraping bowl often, until well mixed. Stir in coconut and nuts. (Batter will be thick.)
Spread into 3 greased (5 1/2x3-inch) mini loaf pans. Bake 35-45 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pans. Cool completely.
*Substitute chopped walnuts.

I found this recipe from a Land o' Lakes advertisement page featuring recipes in Reader's Digest magazine about 15 years ago and, unfortunately, lost during one of my moves in the years since. I've been searching for this recipe--the best banana bread I've ever had--for years! Finally, finally, I was able to find it again here! The funny thing is that I've never made it with the coconut or macadamia nuts and I still think it's amazing. The other ingredients are things you usually have on hand (both the OJ and the orange rind can be provided from a single orange or mandarin) and it's relatively easy to make; the hardest part is grating orange peel. :) Just tried it with chocolate chips and it was awesome. Highly, highly recommend... Don't lose the recipe! :D
I have made this recipe time and time again and get so many compliments how tasty and moist thisrecipe is. It's so easy, that I already know the recipe by heart!

i have a land o lakes cookbook that i was given about 15 years ago and i use this receipe all the time, it is the only bananna receipe that i will use
