Rich toffee flavor comes through in this tender butter cookie. It is a real favorite cookie!
Heat oven to 350°F. Combine all ingredients except toffee bits in large bowl. Beat at medium speed, scraping bowl often, until well mixed. Stir in toffee bits.
Shape dough into 1-inch balls. Place 2 inches apart onto ungreased cookie sheets. Bake 8- 11 minutes or until edges are very lightly browned. Sprinkle warm cookies with sugar, if desired.
Chocolate Chip Sugar Cookies: Substitute 1 cup mini real semi-sweet chocolate chips for toffee bits.

This recipe is a family favorite! It is easy to make and the cookies are pretty too - a nice addition to any cookie tray.The Land O Lakes cookie book I have calls for 6 oz of brickle bits which is about 50% more than this recipe. If you really love the brickle bits increase the amount!
