Almond Brickle Sugar Cookies

Rich toffee flavor comes through in this tender butter cookie. It is a real favorite cookie!

Ingredients

2 1/4 cups all-purpose flour
1 cup sugar
1 cup Land O Lakes® Butter, softened
1 teaspoon baking soda
1 teaspoon vanilla
1 cup English or almond toffee bits
Sugar, if desired

Directions

Heat oven to 350°F. Combine all ingredients except toffee bits in large bowl. Beat at medium speed, scraping bowl often, until well mixed. Stir in toffee bits.

Shape dough into 1-inch balls. Place 2 inches apart onto ungreased cookie sheets. Bake 8- 11 minutes or until edges are very lightly browned. Sprinkle warm cookies with sugar, if desired.

Variation:

Chocolate Chip Sugar Cookies: Substitute 1 cup mini real semi-sweet chocolate chips for toffee bits.

I've been making these cookies for years at our annual cookie bake and they are one of everyone's favorites! No matter what else I make...this one is a must-do every year! Loved by both kids and adults! So simple, so yummy!
DI make these cookies every year and give as gift. It is October and everyone is already asking for them.
This recipe is a family favorite! It is easy to make and the cookies are pretty too - a nice addition to any cookie tray.
The Land O Lakes cookie book I have calls for 6 oz of brickle bits which is about 50% more than this recipe. If you really love the brickle bits increase the amount!
