Black Bean Tamale Pie

This mexican-inspired pie uses ground turkey mixed with salsa, taco seasoning and cheese. The crust is made simple using a corn muffin mix.

1 tablespoon LAND O LAKES® Butter
1/2 cup chopped onion
1/3 cup chopped green bell pepper
8 ounces ground turkey
1 (15-ounce) can cooked black beans, rinsed, drained*
1 cup salsa
1 (1.25-ounce) package taco seasoning mix


1 (8 1/2-ounce) package corn muffin mix
1 egg
2 tablespoons milk
1/2 cup frozen whole kernel corn
2 ounces (1/2 cup) LAND O LAKES® Co-Jack® or Cheddar Cheese, shredded


Sour cream


Heat oven to 350°F. Melt butter in 10-inch skillet until sizzling; add onion and green pepper. Cook over medium heat, stirring occasionally, until vegetables are crisply tender (2 to 3 minutes). Add turkey; continue cooking, stirring occasionally, until turkey is no longer pink (5 to 7 minutes). Stir in beans, salsa, seasoning mix and 1 cup cheese; set aside.

Combine corn muffin mix, egg and milk in medium bowl. Stir in corn. With lightly greased hands, press mixture onto bottom and up sides of greased 9 inch pie plate. Spoon bean mixture into cornmeal crust.

Bake for 20 to 30 minutes or until set. Remove from oven; sprinkle with 1/2 cup cheese. Continue baking for 2 to 5 minutes or until cheese begins to melt. Let stand 5 minutes before serving. Serve with sour cream and salsa.

*Substitute 1 (15 1/2-ounce) can cooked pinto beans, rinsed, drained.

Was yummy!!!!! I made this 2 different ways. One with the corn muffin crust and another with a simple pie crust. The corn muffin one went quickly. I was pleased to high heaven. I have made the salsa recipe I learned at Land O Lakes many many years ago. Its still perfection. This recipe is very economical!!! Gardens are a god send. Ground turkey is very reasonable. Cheese glorious cheese no words... the taste was wonderful flavorful, fresh and delicious.
The flavor will depend on the salsa you use so get one you trust. Mine was excellent with homemade salsa that I had canned.

I made a mistake and forgot to put corn into the crust so I pressed it into crust which actually made it easier to thin out the crust and spread it onto the sides of the pan
