Marinated Cheese With Peppers & Olives

This appetizer recipe is delicious and easy - marinate cheese cubes, red peppers, and ripe olives for a make-ahead appetizer dish.

1/4 cup olive or vegetable oil
12 ounces (about 3 cups) Cheddar cheese, cut into 3/4-inch cubes
2 red bell peppers, cut into 3/4-inch pieces
1 (14-ounce) can whole pitted ripe olives, drained
1 tablespoon white vinegar
1/2 teaspoon dried basil leaves
1/2 teaspoon dried oregano leaves
1/2 teaspoon finely chopped fresh garlic


Combine all ingredients in medium bowl. Cover; refrigerate at least 4 hours or overnight.

My guests liked this very much. I used apple cider vinegar and added a bit more than called for - it was great and very easy.
I served this on an appetizer tray with crackers and small slices of french bread, and was inundated with recipe requests. I used EVOO and sharp white cheddar cheese (couldn't find Chedarella). Most importantly, I let it refrigerate overnight, which intensified the flavors. Excellent!
Served this as an appetizer and it was enjoyed by my family. Makes a large amount and I will cut the recipe in half next time.
