Becky has spent her entire career cooking and baking, which are also her favorite hobbies outside of work. For her, time spent in the kitchen not only relieves stress, but is lots of fun as well. Becky’s love for baking began as a child, standing on a chair next her mom, adding ingredients and mixing up dough.
Clafouti is a dessert similar to fruit cobbler, but made without baking powder.
Heat oven to 350°F. Combine rhubarb and strawberries in medium bowl.
Combine 1/3 cup sugar and nutmeg in small bowl. Sprinkle sugar mixture over rhubarb and strawberry mixture; toss to coat. Place rhubarb mixture into ungreased 2-quart round casserole.
Combine all remaining ingredients
half & half in medium bowl. Beat at low speed, scraping bowl often, until smooth. Spread batter over rhubarb mixture. Bake 55-60 minutes or until surface is golden brown and set.
To serve, spoon into individual serving dishes; top with half & half, if desired.
