Orange Walnut Bread (Gluten-Free Recipe)

Nut bread with a hint of orange. This nut bread ecipe makes a moist quick bread with extra special flavor.

2 cups Gluten-Free Flour Blend (see below)
3/4 cup sugar
1/2 cup milk
1/2 cup orange juice
2 tablespoons Land O Lakes® Butter, melted
2 tablespoons freshly grated orange zest
1 teaspoon gluten-free baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup chopped walnuts


Heat oven to 350°F.

Combine all ingredients except walnuts in bowl; beat at medium speed until well mixed. Stir in walnuts. Pour into greased 8x4-inch loaf pan.

Bake 50-60 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pan.

Recipe Tip

Gluten-Free Flour Blend: Combine 2 cups rice flour, 2/3 cup potato starch, 1/3 cup tapioca flour and 1 teaspoon xanthan gum. Use appropriate amount for recipe; store remainder in container with tight-fitting lid. Stir before using.

I made this for a friend that is also dairy intolerant milk for rice milk and the butter for shortening. She thinks it is the greatest and requests it often.
This had become another family favorite. Moist, tasty and no one knows it is gluten free.
I didn't have the fresh orange peel so used 2 tsp of dried orange peel. The bread was moist and very tastey. It is a winner. Thanks
