Mini Honey Muffins
Bite-sized honey-sweetened muffins can be served for brunch or with your favorite tea or coffee.

Heat oven to 350°F. Combine 1/3 cup honey and 2 tablespoons butter in 1-quart saucepan. Cook over medium heat, stirring occasionally, until butter is melted (2 to 5 minutes). Stir in milk until well mixed; set aside to cool.
Meanwhile, combine flour, baking powder, salt and baking soda in large bowl. Stir egg into cooled milk mixture with wire whisk. Add milk mixture to flour mixture; stir just until moistened. (Batter will be slightly lumpy.)
Spoon batter into greased mini muffin pans. Bake for 10 to 13 minutes or until lightly browned. Let stand 5 minutes; remove from pans.
Combine all glaze ingredients in small bowl. Dip top of each warm muffin into glaze; place onto wire cooling rack.
Batter can be spooned into greased 12-cup regular-size muffin pan. Bake for 12 to 17 minutes or until lightly browned. Let stand 5 minutes; remove from pan. 12 muffins
