Bite-sized honey-sweetened muffins can be served for brunch or with your favorite tea or coffee.
Heat oven to 350°F.
Combine 1/3 cup honey and 2 tablespoons butter in 1-quart saucepan. Cook over medium heat, stirring occasionally, 2-5 minutes or until butter is melted. Stir in milk until well mixed; set aside to cool.
Combine flour, baking powder, salt and baking soda in bowl. Stir egg into cooled milk mixture with whisk. Add milk mixture to flour mixture; stir just until moistened. (Batter will be slightly lumpy.)
Spoon batter into greased mini muffin pans. Bake 10-13 minutes or until lightly browned. Let stand 5 minutes; remove from pans.
Combine all glaze ingredients in bowl. Dip top of each warm muffin into glaze; place onto cooling rack.

I loved the tasted of the muffins, as I could taste the honey. But I thought they were a bit dry. If I make them again, I will add a little bit of milk to make the batter a little bit thinner.
it sounds like a good recipe.
Love the honey taste and wasn't overly sweet. Added fresh blueberries to second batch which made them even better.
This morning I made these. I will definitely make them again. They are wonderful, light & like a bite of heaven.
