Glazed Chicken & Orange Salsa

Ingredients

Salsa

2 medium (1 cup ) seedless oranges, segmented, membrane removed, chopped

1 tablespoon sugar

2 tablespoons sliced green onions

2 tablespoons chopped fresh parsley

Chicken

6 (4-ounce) boneless skinless chicken breast halves

1/2 teaspoon salt

1/8 teaspoon pepper

Glaze

1 cup orange juice

3 tablespoons Land O Lakes® Butter

1 tablespoon cornstarch

How to make

  1. STEP 1

    Combine all salsa ingredients in bowl. Cover; refrigerate until serving time.

  2. STEP 2

    Heat gas grill on medium or charcoal grill until coals are ash white. Sprinkle chicken breasts with salt and pepper.

  3. STEP 3

    Combine all glaze ingredients in 1-quart saucepan. Cook over medium heat, stirring constantly, 5-7 minutes or until mixture thickens and comes to a full boil.

  4. STEP 4

    Place chicken on grill; brush with glaze. Grill, turning once and brushing with glaze, 12-15 minutes or until internal temperature of chicken reaches at least 165°F and chicken is no longer pink. Serve with salsa.
