Sugar-Topped Blueberry Muffins

Blueberry muffins with a sweet streusel topping are great for breakfast or brunch with coffee or tea.

Ingredients

Streusel

1 1/3 cups all-purpose flour
1 cup firmly packed brown sugar
1/2 cup cold Land O Lakes® Butter, cut into chunks

Muffins

2/3 cup all-purpose flour
1 1/2 teaspoons baking powder
1 1/2 teaspoons ground cinnamon
1/2 teaspoon baking soda
1/2 teaspoon salt
2/3 cup buttermilk*
1 cup fresh or frozen blueberries

Directions

Heat oven to 400°F. Combine 1 1/3 cups flour and brown sugar; cut in butter with pastry blender or fork until mixture resembles coarse crumbs. Reserve 1/2 cup for streusel topping.

Add all muffin ingredients except blueberries to remaining streusel mixture. Stir just until moistened. Gently stir in blueberries.Spoon mixture evenly into paper-lined or greased muffin cups.

Sprinkle each muffin with about 1/2 tablespoon reserved streusel mixture. Bake for 20 to 25 minutes or until lightly browned. Cool 5 minutes; remove from pans.



*Substitute 2 teaspoons vinegar plus enough milk to equal 2/3 cup. Let stand 10 minutes.

Recipe Tip

To make coffeecake, heat oven to 375°F. Prepare as directed. Spread batter into greased 13x9-inch baking pan; sprinkle with reserved streusel mixture. Bake for 30 to 35 minutes or until light golden brown. Cool 10 minutes; cut into squares.

This was just super! Made them for my grandchildren in the mini muffin pan, they came out looking like they were made in a bakery! Just perfect. I used dried cranberries instead of the blueberries, but will bake them again with blueberries when mine in the garden are ready. I also used light butter and non fat milk to lighten them up for my weightwatchers program. They tasted delicious would recommend them as a good basic.
I have made these muffins for over three years and I can't find one that is better. I also make these for our bake sales when doing fund raisers.
First of all it is my fault for trying this in the evening when I was tired. I do not have muffin tins so I thought I would make it as a coffee cake. When I saw how much flour goes into the streusel mix I was puzzled and called Land O Lakes. They told me after I combined the streusel mix, then you mix it with the batter. Why isn't cinnamon in the streusel mix? I could barely spread the batter into the 13 X 9 pan. The 1/2 streusel mix is barely enough to cover the coffee cake and I couldn't spread the batter evenly. Every utensil could not be cleaned off easily as the batter stuck to everything like glue. Never again, it ain't worth it~
Beautiful muffins that taste just as good as they look! A big hit with my son and daughter. The aroma is wonderful when they are baking! Yum!
