Crunchy Fish & Spuds

Fish fillets and potatoes team up in the same pan for a tasty dinner.

Ingredients

2 medium (2 cups) potatoes, sliced 1/4-inch
3/4 cup crushed cornflakes
1 tablespoon chopped fresh parsley
1 teaspoon paprika
3/4 teaspoon garlic salt
1 pound fish fillets

Directions

Heat oven to 350°F. Melt butter in 13x9-inch baking pan in oven (5 to 7 minutes).

Add potato slices to prepared pan; stir to coat. Cover with aluminum foil. Bake for 20 to 25 minutes or until potato slices are fork tender.

Meanwhile, stir together all remaining ingredients except fish fillets in 9-inch pie pan. Spoon potatoes to one side of baking pan. Dip fish into melted butter that potatoes were baked in, then coat with crumb mixture. Place fish to one side in same baking pan with potatoes. Sprinkle fish and potatoes with remaining crumb mixture. Bake for 20 to 30 minutes or until fish flakes with a fork.

Tip: Suggested fish for this recipe include walleye, perch, red snapper or orange roughy.

Microwave Directions: Melt butter in 13x9-inch baking dish on HIGH (60 to 70 seconds). Add potato slices; stir to coat. Cover; microwave on HIGH, stirring after half the time, until potato slices are fork tender (5 to 6 minutes). Meanwhile, stir together all remaining ingredients except fish fillets in 9-inch pie pan. Spoon potatoes to one side of baking dish. Dip fish into melted butter that potatoes were baked in, then coat with crumb mixture. Place fish to one side in same baking dish with potatoes. Sprinkle fish and potatoes with remaining crumb mixture. Microwave on HIGH until fish flakes with a fork (7 to 9 minutes).

Diane - You could easily add more flavor with additional spices and herbs. My suggestion is to add some salt and pepper or lemon pepper. Also, you could increase the amount of the paprika and/or the garlic salt. It depends on individual tastes but adding a little more flavor would be just fine. Hope you give this recipe another try!
