Potato-Apple Latkes

A great holiday dish, there is no need to serve applesauce with these latkes. Shredded apple sweetens the pancakes - serve with a dollop of sour cream!

Ingredients

2 large (4 cups) baking potatoes, shredded
1 large (1 cup) Golden Delicious apple, shredded
1/2 cup finely chopped onion
1/4 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon baking powder
1/4 teaspoon ground coriander
1/8 teaspoon pepper
Vegetable oil
Sour cream, if desired
Honey, if desired

Directions

Stir together all ingredients except oil, sour cream and honey in bowl.

Heat 1/4-inch oil over medium-high heat in 10-inch skillet. Drop 1/4 cup potato mixture into hot oil, flattening each mound slightly. Fry, turning once, 6- 8 minutes or until crisply brown. Drain well on paper towels. Serve warm with dollop of sour cream; drizzle with honey, if desired.

Made them for breakfast. My kids ate them as fast as I could get them off the grill. I'll have to make more than recipe called for to keep up. I substituted leeks for the onions, since I didn't have any onions in the house, and added a 1/4 teaspoon of cinnamon.
I served the latkes with pork chops that were breaded and tender and yummy and put a dollop of sour cream & applesauce on top of the latkes. I could not get the apples I wanted Jonathan-tart but next time they will be in the stores and I shall make the latkes again.....loved them! Hubby & I agreed tho, no onion next time.
