Gingerbread Pudding Cake

Old-fashioned pudding cake makes a come-back as gingerbread with this holiday cake recipe. The perfect ending for Thanksgiving or Christmas dinner!

2 1/2 cups all-purpose flour
1 1/2 teaspoons baking soda
1 1/4 teaspoons ground ginger
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 teaspoon ground allspice
1/4 teaspoon ground nutmeg
1/2 cup Land O Lakes® Butter, softened
1/2 cup sugar
1 cup mild flavor molasses
1 cup water
3/4 cup firmly packed brown sugar
1 1/2 cups hot water
1/3 cup Land O Lakes® Butter, melted


Heat oven to 350°F. Combine flour, baking soda, ginger, cinnamon, salt, allspice and nutmeg in medium bowl; set aside.

Beat 1/2 cup butter and sugar in large bowl at medium speed until creamy. Add egg; continue beating until well mixed. Reduce speed to low. Beat, alternately adding flour mixture with molasses and 1 cup water, beating after each addition only until blended. Pour batter into ungreased 13x9-inch baking pan; sprinkle with 3/4 cup brown sugar.

Combine 1 1/2 cups hot water and 1/3 cup melted butter in medium bowl; carefully pour over top of batter. (Do not stir.) Bake for 40 to 55 minutes or until gingerbread is cracked on top and toothpick inserted in center comes out clean. Serve warm with ice cream, if desired.

I make this recipe 2-3 times at least each fall. It's a hit at gatherings or for dessert at home. When I serve it, I flip the piece over so the yummy sauce produced on the bottom during baking is on top. Then I can also catch whatever sauce might still be in the pan for that piece and add it. Other than fresh whipped cream, I also like to serve it with Cinnamon Ice Cream! Delish!

This is excellent! It is a recipe that I will pass down to my kids for sure. It is the only gingerbread recipe that I have ever liked.
I have made this numerous times and have to say it has a wonderful ginger flavour for all gingerbread lovers. Really moist and goes great with vanilla ice cream. You will love this if you like gingerbread cake.

This recipe is incredible! I served it warm as dessert for Christmas dinner with fresh whipped cream on the side. My husband who is a chef and dislikes gingerbread even enjoyed it. We will be serving it every Christmas from now on!
I do recommend going the extra yard and making your own whipped cream, using Land O Lakes heavy cream of course and pure vanilla. This dessert is that delicious to spend the extra time on.
