Pork Chops With Caramelized Onions

The sweet caramelized onions complement the seasoned pork chops.

Ingredients

4 (1/2-inch thick) pork chops
1/2 teaspoon salt
1/2 teaspoon coarse ground pepper
3 medium onions, thinly sliced
1/2 teaspoon dried rosemary*
2 teaspoons finely chopped fresh garlic

Directions

Melt butter in 12-inch skillet until sizzling; add pork chops. Cook over medium-high heat, turning once, 8-10 minutes or until browned. Season with salt and pepper. Remove chops to serving platter. Keep warm.

Place onions in skillet with pan juices; sprinkle with rosemary. Cook over medium heat, stirring occasionally, 8-10 minutes or until onions are caramelized. Stir in garlic; continue cooking 2-3 minutes or until garlic is softened.

Return chops to pan; continue cooking 4-5 minutes or until pork reaches at least 160°F. and is no longer pink.


*Substitute 1 1/2 teaspoons chopped fresh rosemary.

Recipe Tip

To reheat leftovers, place pork chops on microwave-safe plate; cover loosely. Microwave 1-3 minutes or until heated through.

Prepared pork chops for dinner tonight using this recipe-success at our house.Chops were delicious--husband and Dad loved them. Sweet potatoes were side dish and were a great dish to serve with the pork chops. I will probably try adding the apples as suggested by Judy when I prepare these for dinner again.
This recipe is a must have!! I tweaked it a little bit using 6 boneless pork chops and only 3 tablespoons of butter and also adding mushrooms. I have shared it with all my friends. A good side dish is twice baked potatoes. My husband loved it!
So delicious. I thought I was burning it at first but the onions were just browning- It is something I make on a regular basis.
A sure fire way to make this recipe a "5" is to add 2 peeled, diced tart apples when carmalizing the onions, and 1 stick cinnamon. Smells and tastes like the holidays!! Do it for your bone-in pork roast, too......
