Savory Sausage Stew

Ingredients

1/2 pound kielbasa or smoked sausage, cut into 1/2-inch pieces
2 medium (1 cup) carrots, sliced 1/4-inch
1 rib (1/2 cup) celery, sliced 1/2-inch
1 medium (1/2 cup) onion, chopped
2 cups coleslaw mix
1/4 cup chopped parsley
2 (14 1/2-ounce) cans Italian or plum-style diced tomatoes
1/4 teaspoon salt
1/8 teaspoon pepper

Directions

Combine kielbasa, carrots, celery and onion in 4-quart saucepan or Dutch oven. Cook over medium heat, stirring occasionally, until vegetables are crisply tender (8 to 12 minutes).

Add all remaining ingredients. Continue cooking, stirring occasionally, until mixture comes to a full boil (2 to 3 minutes). Reduce heat to low. Cook until vegetables are tender (20 to 25 minutes).

I make the ORIGINAL recipe from the Land O'Lakes cookbook called "Savory Crock Hearty Stew" and there is a lot more to the sauce. I think they slimmed down some of the steps to speed up the process, but why mess with a good thing? You cook the sausage (I use breakfast sausage) and veggies the same, but in a separate pan stew up whole canned tomatoes, with half a fresh chopped cabbage, a splash of apple juice (adds a bit of sweetness and counter-acts the bitter flavors), and bay leaf. By the time the sausage and veggies are done you mix in the tomato/cabbage stew into the skillet, stir and serve. It's a family classic that is hearty and delicious!
I DIDN'T EAT IT BUT MADE IT FOR MY HUSBAND'S FISHING TRIP. THEY SAID IT WAS GOOD BUT THAT IS ALL I GOT. HAVEN'T MADE IT SINCE LAST YEAR.
