Summertime Blueberry Tart

Blueberries are hidden on the bottom of this refreshing summertime dessert.

Ingredients

Crust

1 (9-inch) refrigerated unbaked pie crust

Filling

1/2 cup sugar
1/2 cup sour cream
1/4 cup Land O Lakes® Butter, melted
2 tablespoons all-purpose flour
1/2 cup buttermilk or milk
1 tablespoon lemon juice
1 teaspoon vanilla
1/2 pint (1 cup) fresh blueberries, reserve 1 tablespoon for garnish, if desired

Directions

Heat oven to 450°F.

Place pie crust into ungreased 9-inch pie pan. Bake 8-9 minutes or until crust is lightly browned.

Reduce oven temperature to 350°F.

Combine all filling ingredients except blueberries and whipped cream in 5-cup blender container. Cover; blend at High speed until smooth.

Place blueberries onto bottom of baked crust. Pour filling over blueberries. Cover edge of crust with aluminum foil to prevent crust from browning too quickly. Bake 30-40 minutes or until filling is set. Cool completely. Cover; refrigerate until ready to serve. Garnish with whipped cream and reserved blueberries, if desired.

Since I had one cup of blueberries I gave this tart a try. I let it bake more like 50 minutes because it didn't look like it was set in the middle. My boyfriend really liked it. We tryed vanilla ice cream on the side the first day but this was not good. Don't know why it would make such a difference but whipping cream was perfect. We have been eatting this tart for three days now and it is just as good as the first day.
This is a quick and easy recipe. Everyone came back for more!
