Chicken Salad with Apples

4 cup olive or vegetable oil2 tablespoons chopped fresh parsley
2 tablespoons frozen orange juice concentrate , thawed
1 tablespoon country-style Dijon mustard
1 tablespoon honey
2 tablespoons balsamic vinegar

4 teaspoon coarse ground pepperSalad
6 ounces (about 4 cups) kale, ribs and stems removed, torn or curly endive

2 cups cubed cooked chicken1 large (2 cups) tart apple, cored, thinly sliced

2 cup crumbled feta cheese1
2 cup coarsely chopped walnuts, toastedHow to make

STEP 1
Combine all dressing ingredients in jar with tight-fitting lid; shake well. Refrigerate at least 1 hour.

Combine all salad ingredients except walnuts and cheese in large bowl. Shake dressing well; pour over salad. Toss lightly to coat.

To serve, divide salad among 4 plates; sprinkle with walnuts and cheese.
