Chicken Salad With Apples
The flavors of romaine and kale mix nicely with chicken, apples, walnuts and feta cheese in this refreshing salad.

1/4 cup olive or vegetable oil
2 tablespoons chopped fresh parsley
2 tablespoons frozen orange juice concentrate, thawed
1 tablespoon country-style Dijon mustard
1 tablespoon honey
2 tablespoons balsamic vinegar
1/4 teaspoon coarse ground pepper
4 cups torn romaine lettuce*
6 ounces (about 4 cups) kale, ribs and stems removed, torn or curly endive*
1 1/2 cups cubed cooked chicken
1 large (2 cups) tart apple, cored, thinly sliced
1/2 cup crumbled feta cheese
1/2 cup coarsely chopped walnuts, toasted
Combine all dressing ingredients in jar with tight-fitting lid; shake well. Refrigerate at least 1 hour.
Combine all salad ingredients
walnuts and cheese in large bowl. Shake dressing well; pour over salad. Toss lightly to coat.
To serve, divide salad among 4 plates; sprinkle with walnuts and cheese.
*Substitute 4 cups torn mixed salad greens.
