This refreshing dessert uses lemon pie filling for extra creaminess.
Combine all crust ingredients in bowl; mix well. Press onto bottom of ungreased 9-inch square pan; set aside.
Gently stir together raspberries and 1 tablespoon sugar in bowl; set aside.
Combine whipping cream and vanilla in bowl. Beat at high speed, scraping bowl often, 3-4 minutes or until stiff peaks form. Reserve 1 cup whipped cream. Gently stir lemon curd into remaining whipped cream.
Spoon onto prepared crust. Gently swirl raspberries through lemon mixture. Frost top with reserved whipped cream. Cover; freeze at least 8 hours or overnight until firm.
Let stand at room temperature 10 minutes before serving. Just before serving, garnish with reserved raspberries.

i WOULD RATE THIS RECIPE A 10, SO THAT WOULD BE 5 STARS!!! iT WAS PRETTY EASY TO MAKE AND THE RASPBERRY AND LEMON FLAVORS WERE SO REFRESHING. IT WAS A BIG HIT AT OUR HOUSE!
I had to whip the cream by hand, ha ha, so my arms were about to fall off, but the lemon and whipped cream mixture was divine! The crust was very good as well. I loved serving this bar, and everyone loved it! :)
Only complaint- I had trouble finding the lemon pie filling. I made this for a large dinner party and it was a huge hit! Easy to make and easy to serve. Perfect for company because you can make it ahead of time. I used frozen berries instead of fresh, much easier. I topped each piece with canned whipped cream, 2 fresh raspberries and a sprig of mint. Loved It!!
