Herb-Marinated Pork Tenderloin

Grilled pork tenderloin is a great start to a summer barbecue.

1/2 cup white wine or chicken broth
1/4 cup olive or vegetable oil
1/4 cup chopped fresh rosemary*
2 tablespoons chopped fresh sage leaves**
2 tablespoons chopped fresh thyme leaves ***
2 teaspoons finely chopped fresh garlic
2 pounds pork tenderloin


Combine all ingredients except pork in large resealable plastic food bag; add pork tenderloin. Tightly seal bag; turn bag several times to coat pork well. Place bag in 13x9-inch pan. Refrigerate, turning occasionally, 3 hours or overnight.

Heat gas grill on medium or charcoal grill until coals are ash white. Remove pork from marinade; reserve marinade.

Place pork onto grill. Close lid; grill, turning and basting occasionally with marinade, until meat thermometer reaches at least 160°F. (40 to 50 minutes).

*Substitute 1 tablespoon dried rosemary.

**Substitute 2 teaspoons dried sage leaves.

***Substitute 2 teaspoons dried thyme leaves.

The longer the pork tenderloin is marinated, the richer the flavor.

This is absolutely scrumptious! I was looking for a recipe using all the herbs I grew this summer and found this one. My husband went crazy over it. I was hoping for leftovers, but hubby ran all around the neighborhood to share slices. It smelled insane while it was on the grill. Everyone loved it. Easy, easy, but certainly special enough for company. Use fresh herbs if at all possible! You won't be sorry!
