Pears, Pasta & Pecan Salad

Try this unique pasta salad with pears and a honey and lime-flavored salad dressing.

Ingredients

Pasta

4 ounces (1 cup) uncooked dried gemelli (double twist pasta) or small pasta shells

Salad Dressing

1 teaspoon freshly grated lime peel
3 tablespoons lime juice
3 tablespoons olive or vegetable oil
2 tablespoons honey

Salad

1/4 cup coarsely chopped pecans, toasted
2 ribs (1 cup) celery, sliced
1 medium pear, sliced, quartered
1 medium apple, sliced, quartered
2 tablespoons chopped green onions

Directions

Cook gemelli according to package directions. Rinse with cold water; drain.

Meanwhile, combine all salad dressing ingredients in small bowl.

Just before serving, toss together cooked pasta and all remaining salad ingredients in large bowl. Drizzle with dressing; toss gently to coat.

I made this pasta salad for my culinary class. Everyone loved the unique lime flavor with the pasta and fruit. I also added dried cherries for some color. Several students asked for the recipe. I will definitely make it again. A refreshing unique salad!
