Chicken With Vegetables & Rice

The wild rice can be prepared early in the day and reheated in the microwave while the chicken and vegetables are being cooked.

Chicken & Vegetables

2 tablespoons LAND O LAKES® Butter
1 pound boneless skinless chicken breasts, cut into 1-inch pieces
1 teaspoon finely chopped fresh garlic
1/4 cup chopped green onions
1 medium red, yellow or green bell pepper, coarsely chopped
8 ounces sugar snap peas or pea pods, tips and strings removed, cut in half
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 cup dry white wine or water


2 cups hot cooked wild rice


Melt butter in 10-inch skillet until sizzling; add chicken and garlic. Cook over medium-high heat, stirring often, until chicken is no longer pink (5 to 7 minutes).

Stir in all remaining ingredients except wine and rice. Continue cooking, stirring often, until vegetables are crisply tender (3 to 5 minutes).

Stir in wine. Continue cooking, stirring constantly, until heated through (1 to 2 minutes). Serve over rice.
