Double Chocolate Chocolate Chip Cookies

These chocolate cookies have less fat and cholesterol when made with light butter.

1 cup semi-sweet chocolate chips
3/4 cup sugar
1/2 cup Land O Lakes® Light Butter, softened*
1 teaspoon vanilla
3/4 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1 1/2 cups uncooked quick-cooking oats


Heat oven to 350°F.

Microwave 1/3 cup chocolate chips in bowl 30-60 seconds, stirring every 15 seconds, until melted.

Combine sugar and light butter in bowl. Beat at medium speed, scraping bowl often, until creamy. Add melted chocolate, egg and vanilla; continue beating until well mixed. Add flour, baking powder and salt; beat at low speed until well mixed. Stir in remaining chocolate chips and oats.

Drop dough by rounded teaspoonfuls onto greased cookie sheets. Bake 10-12 minutes or until set. (Do not overbake.) Cool 1 minute on cookie sheet; remove to cooling rack.


*Substitute Land O Lakes® Butter.
