1 tablespoon olive or vegetable oil
1 (10-ounce) (12-inch) prebaked Italian pizza crust or focaccia
1/2 teaspoon finely chopped fresh garlic
1 (3-ounce) package (3/4 cup) sliced pepperoni
1 (14-ounce) can diced tomatoes with basil, garlic and oregano, drained
1/3 cup freshly grated Parmesan cheese
Heat oven to 450°F. Place ungreased large baking sheet in oven to heat.
Spread oil over pizza crust; sprinkle with garlic. Top with 1/2 cup provolone cheese. Top with pepperoni and tomatoes. Sprinkle with remaining 1 cup provolone cheese and Parmesan cheese.
Place pizza on heated baking sheet. Bake 7-9 minutes or until cheese melts and pizza is heated through.
Tomato juice drained from tomatoes can be frozen and used in soups or stews.
