1 (24-ounce) package refrigerated prepared mashed potatoes
1 pound lean ground beef
1 medium (1/2 cup) onion, chopped
1 (14 3/4-ounce) can cream-style corn
1 (1-ounce) package taco seasoning mix
Heat oven to 375°F. Stack cheese slices; coarsely chop.
Combine chopped cheese, mashed potatoes and egg in medium bowl; mix well. Set aside.
Cook ground beef and onion in 10-inch skillet over medium-high heat, stirring occasionally, until beef is browned (4 to 5 minutes). Drain off fat. Stir in corn and taco seasoning. Spoon hot beef mixture into ungreased 8 inch square baking pan; top with potato mixture.
Bake for 30 to 35 minutes or until heated through.
To lower sodium in this recipe, substitute reduce-sodium taco seasoning mix.
