Taco soup makes it even easier to enjoy the flavor of tacos - in a bowl!
Cook ground beef, onion and green pepper in 4-quart saucepan over medium-high heat, stirring occasionally, until beef is no longer pink (6 to 10 minutes). Drain off fat.
Stir in seasoning mix; continue cooking 1 minute. Stir in vegetable juice and salsa. Continue cooking, stirring occasionally, until heated through (3 to 5 minutes).
To serve, spoon soup into serving bowls; sprinkle each serving with 2 tablespoons
cheese. Garnish with desired toppings.
Dietary Fiber: 3g
This is a family favorite! I leave out the salsa, add a can of corn and a can of Black beans. Kick it up a bit with Green chilis! Perfect anytime of the year :)
This is quick, simple, and easy to customize. I spiced it up a bit and served it with quesadillas for a fast supper.

This is SO good, and SO quick and easy. I used ground turkey & added 1/2 a box of Rice a Roni Spanish Rice....it was absolutely PERFECT!!!! I will pass the recipe along to my friends most definitely.
I added a can of corn and a can of Spanish Rice. It was perfect then. Too tomatoey before the additions.
This is an excellent soup and it has become a regular at our house. The kids love that they can add the taco toppings they like and leave out what they don't.
