This is a great recipe for two, four or more family members. It is so easy, I can make it when I come home from work and have the meal on the dinner table in no time. I have shared with co-workers and friends and they have enjoyed it and will be making it themselves as well.
This was so easy and delicious. The only changes I made was leaving the celery out (didn't have any) and adding small black beans and paprika. I doubled the recipe and it was great!
The onion should be fried either with or after the pork. More flavor!

Im making this for dinner tonight and it came out soooooo delicious. I used green chillies which added a delightful flavor to the stew. I've tasted it and I know my family will enjoy having this for dinner on this cold day.

Made this tonight for the hubs and he loved it! I scaled the recipe up since I had more meat and needed to use up potatoes- delish! Next time I will brown the pork a bit more but all in all this was wonderful. Thanks LandoLakes!
Yum!...I didn't have seasoned tomatoes on hand so instead used a can ofdiced tomatoes, added a garlic clove, used up four slices of prosciutto I had leftover in fridgeas well as 1/2 can of Cannelini beans. I reduced the salt because of the prosciutto and substituted Sweet potatoes for the red potatoes....a great complete meal in one pot and so easy!
I'm glad I went with this recipe. I used already-cooked pork I bought from a Mexican restaurant that was too gamey to chew, and crushed tomatoes instead of chopped stewed ones. What a quick and easy way to enjoy all these ingredients I had laying around! Very delicious.
My husband and kids are very picky, but I get tired of cooking the same meals over and over. The store had a sale on pork stew meat so I tried this recipe, mainly due to the good reviews and simple recipe. The only change that I made was that I used a can of beef broth plus enough water to make it two cups (I believe the can was 14.5 oz). Everyone loved the stew!
This was so easy and delicious! My husband requested I make it again 2 days later :) The second time I added some Jamaican style dumplings to the stew, it was just as delicious and extra thick.
I made a double batch in order to have enough to give to a family in need and also to serve to my husband and me. We both loved it and hope that family we are taking it to tomorrow will also. I used thick lean pork loin chops cut into cubes and browned the pork in some garlic butter I happened to have on hand...this really kicked up the flavor. This is the only change made to this very easy recipe which would be great to serve for guests during these cold winter days.
