Plum Crostata

A delicious dessert with perfectly ripened plums that caramelize during baking on a shortbread crust.

2 cups all-purpose flour
1/4 cup sugar
1/2 teaspoon salt
6 to 8 tablespoons cold water


6 medium (3 cups) ripe plums, pitted, sliced 1/8-inch
1/2 cup firmly packed brown sugar
1 tablespoon orange juice
1/2 to 1 teaspoon freshly grated orange zest
Powdered sugar, if desired


Heat oven to 400°F. Combine flour, sugar and salt in bowl; cut in butter until mixture resembles coarse crumbs. Mix in water with fork until flour is just moistened.

Press or roll pastry into 14-inch circle onto ungreased baking sheet. Shape into 10-inch circle by forming 2-inch rim around outside edge; loosely crimp edge. Prick bottom of pastry with fork. Bake 15 minutes.

Arrange plums in pinwheel fashion on pastry. Stir together brown sugar, orange juice and orange zest in bowl; spread evenly over plums. Continue baking  22-27 minutes or until pastry is golden brown.

Sprinkle with powdered sugar just before serving, if desired.
