Cherry Date Skillet Cookies

Cherry date cookies are made in the skillet and topped with snowy coconut coats for a delicious taste. They are ready in just a short time.

Ingredients

1 cup Land O Lakes® Butter
1 cup firmly packed brown sugar
1 (8-ounce) package chopped dates
1 Land O Lakes® Egg
3 cups crisp rice cereal
4 cups sweetened flaked coconut
1/2 cup chopped maraschino cherries, drained
1 tablespoon vanilla

Directions

Melt butter in 10-inch skillet; stir in brown sugar and dates. Remove from heat. Stir in egg; return to heat. Cook over medium heat, stirring constantly, until mixture comes to a full boil (4 to 6 minutes). Boil, stirring constantly, 1 minute.

Remove from heat; stir in 1 cup coconut and all remaining ingredients until moistened. Let stand 10 minutes.

Shape rounded teaspoonfuls into 1-inch balls; roll in remaining coconut.

Recipe Tip

- To make this recipe gluten-free, use gluten-free crisp rice cereal and gluten-free vanilla.

I first discovered Cherry Date Balls at a local bakery and LOVED them! The bakery recently closed, so I was on a mission to find a recipe so I could make them myself. This recipe was exactly what I was looking for! the only change I will make next time is to reduce the amount of dates slightly, but that is just my personal preference.

About 15 years ago we found this recipe and absolutly loved it. A few years later we lost the recipe and have been searching for it ever since. I am all grown now and I'm so excited to have found this recipe online. I can't wait to share it with my children and friends. This is a one of a kind fabulous Chistmas cookie that we will never be without again.
