Cherry date cookies are made in the skillet and topped with snowy coconut coats for a delicious taste. They are ready in just a short time.
Melt butter in 10-inch skillet; stir in brown sugar and dates. Remove from heat. Stir in egg; return to heat. Cook over medium heat, stirring constantly, 4-6 minutes or until mixture comes to a full boil. Boil, stirring constantly, 1 minute.
Remove from heat; stir in 1 cup coconut and all remaining ingredients until moistened. Let stand 10 minutes.
Shape rounded teaspoonfuls into 1-inch balls; roll in remaining coconut.

These are favorite of all who eat them! they freeze well also - I spread them on a cookie sheet until frozen them put them in a plastic bag. When I need some, just put them in the little papers - they thaw in no time! Evntho it is only 1/2 cup chopped cherries, I wish I could find a quick way than cutting with a scissors.
Love this recipe. These cookies are great for a make ahead cookie - stays fresh for days.Everyone loved them ... just dont tell them there are dates in them
I first discovered Cherry Date Balls at a local bakery and LOVED them! The bakery recently closed, so I was on a mission to find a recipe so I could make them myself. This recipe was exactly what I was looking for! the only change I will make next time is to reduce the amount of dates slightly, but that is just my personal preference.

About 15 years ago we found this recipe and absolutly loved it. A few years later we lost the recipe and have been searching for it ever since. I am all grown now and I'm so excited to have found this recipe online. I can't wait to share it with my children and friends. This is a one of a kind fabulous Chistmas cookie that we will never be without again.
Whenever I make these, everyone asks for the recipe. My father-in-law requests these every year! They are simple to make.
