Double Chip Pecan Cookies

Chocolate and butterscotch chips make this cookie a double winner!

1 cup Land O Lakes® Butter, softened
3/4 cup firmly packed brown sugar
3/4 cup sugar
1 teaspoon vanilla
2 1/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup butterscotch-flavored chips
1/2 cup chopped pecans
1 (12-ounce) package (2 cups) semi-sweet chocolate chips


Heat oven to 375° F.

Combine butter, brown sugar, sugar, eggs and vanilla in bowl. Beat at medium speed, scraping bowl often, until creamy. Add flour, baking soda and salt; beat at low speed until well mixed. Stir in butterscotch chips, pecans and chocolate chips.

Drop dough by rounded teaspoonfuls, 2 inches apart, onto lightly greased cookie sheets. Bake 9-12 minutes or until lightly browned. Cool 1 minute on cookie sheets; remove to cooling rack.

WOW! Such a simple recipe producing such an amazing cookie! I've always had trouble following a recipe, no matter how easy it was for everyone else, for some reason I just couldn't get mine quite right. But I am totally THRILLED with my batch. I had lots of dough left over, so I wrapped it up and stuck it in the freezer for later. We made our cookies rather large, and still ended up with a couple of dozen. Super fun to do with kids! Just a little on the sweet side, I may try cutting back on some of the sugar next time.
These are on my "dangerous cookie" list. I can't resist them!
I made these as a Mother's Day gift for my
85-year-old mother-in-law. She was thrilled.
Of course my husband and I sampled them
before we gave them to her. Delicious!

I love butterscotch chips and try just about any recipe I come across with them as an ingredient. These I love! It is a great chocolate chip cookie with just a touch of the butterscotch. Will definitely be making them again. Also an easy recipe to make since the cookie base is similar to many chocolate chip cookie recipes I've used.
Absolutely the best recipe I have ever made - it was the hit of the cookie exchange last year. Family loves it and asks for it again and again. For variety, I use white chips in place of butterscotch.....YUMMY!
