Turkey Kielbasa 'n Peppers

Turkey kielbasa with colorful peppers and Roma tomatoes make a tasty sausage and pasta main dish.

8 ounces uncooked dried linguine
2 teaspoons purchased minced garlic
3 medium green, red and/or yellow bell peppers, cut into strips
4 Roma tomatoes, chopped
1 (16-ounce) turkey kielbasa sausage ring, cut into 1/4-inch diagonal slices
1/3 cup chopped fresh herbs (basil leaves, sage leaves and/or parsley)*
Freshly grated Parmesan cheese


Cook linguine according to package directions. Drain. Keep warm.

Meanwhile, melt butter in 4-quart saucepan until sizzling; add garlic. Cook over medium-high heat for 1 minute. Add peppers; continue cooking, stirring occasionally, until just tender (5 minutes). Stir in tomatoes and sausage; continue cooking, stirring occasionally, until heated through (4 minutes). Stir in herbs.

To serve, top linguine with sausage and vegetable mixture; sprinkle with cheese.

*Substitute 1 tablespoon dried herbs.

Very easy & tasty. The Parmesan at the end really makes it especially good. I used all red peppers and also added fresh mushrooms a minute or so after the red pepper strips.
I had leftover turkey kielbasa and peppers and roma tomatoes from the CSA. This was a good way to use them but it's not a keeper.
Delicious and quick. Healthy, too. My kids loved this!
We love this for a quick dinner. Can go to the garden and pull peppers and tomatoes and have a great healthy dinner. If the other person thought it was bland, then there weren't enough herbs added. I add a lot of "italian seasonings" and sometimes a dash of red wine. My family loves it!
Overall, this one is very bland. Along with that the sausage and peppers as they are prepared in this recipe just don't make a very good pasta topping.
