This quick weeknight skillet recipe features family favorite ingredients of ground beef and rice.
Cook ground beef in 10-inch skillet over medium-high heat, stirring occasionally, 5-8 minutes or until browned. Drain off fat.
Stir in rice, water, tomatoes and salt. Continue cooking 5-6 minutes or until mixture comes to a boil. Reduce heat to low. Cover; cook, stirring occasionally, 5-6 minutes or until rice is tender.
Stir in cheese; sprinkle with tortilla chips.
*Substitute 2 (14 1/2-ounce) cans any variety chunky tomatoes with seasonings.

Easy and quick to make. Missing seasoning though. Once the beef mixture is drained I would add taco seasoning with the tomatoes, rice and water.
