Nut bars with a great butter crust and a topping of butterscotch chips and mixed nuts make a delicious, chewy bar.
Heat oven to 350°F. Line 13x9-inch baking pan with aluminum foil, extending foil over ends. Spray foil with no-stick cooking spray; set aside.
Combine all crust ingredients in bowl. Beat at low speed, scraping bowl often, until mixture resembles coarse crumbs. Press crumb mixture into prepared pan. Bake 10 minutes.
Place all topping ingredients except mixed nuts in 2-quart saucepan. Cook over low heat, stirring constantly, 5-7 minutes or until chips are melted and mixture is smooth. Stir in nuts until well coated.
Spread mixture over hot, partially baked crust. Continue baking 10-12 minutes or until golden brown. Cool completely. Lift bars out of pan using foil ends; cut into bars.

These are great and easy. For a change this year, I used all cashews.

This is a beautiful bar cookie and is excellent tasting!
This bar tastes so GOOD! I love the chewy texture and strong nut flavor mixed with the butterscotch. I ended up baking them for about 18 minutes because at 12 minutes it looked like the crust wasn't cooked through enough for my taste. I was worried when I poured the nuts over the crust because they didn't completely cover the crust. I used my fingers to spread them out as much as I could but they were about 1/2" shy of the edge of the pan. However, during baking they spread completely to the edges and turned out just great! Very tasty and makes quite a bit.
