Chicken & Spinach Manicotti

Chicken, spinach and cheese fill this favorite Italian entreé.

Ingredients

1 (8-ounce) package (about 14) uncooked dried manicotti shells
2 cups lowfat cottage cheese
2 cups shredded cooked chicken
1/4 cup grated Parmesan cheese
1 (9-ounce) package frozen cut spinach, thawed, well-drained
8 ounces (2 cups) shredded mozzarella cheese
1 (24-ounce) jar pasta sauce

Directions

Heat oven to 350°F. Spray 13x9-inch glass baking dish with no-stick cooking spray.

Cook manicotti shells according to package directions. Drain.

Combine all remaining ingredients except 1 cup mozzarella cheese and pasta sauce in bowl; mix well.

Fill each manicotti shell with 1/3 cup chicken mixture; place into baking dish. Spread remaining filling over shells. Pour pasta sauce over filled shells; top with remaining mozzarella cheese.

Cover; bake 35-40 minutes or until heated through, uncovering during last 5 minutes.

Recipe Tip

- Manicotti can be prepared ahead. Cook pasta shells; prepare sauce and stuff shells. Cover; refrigerate. Bake at 350°F, 45-50 minutes or until heated through, uncovering during last 5 minutes.

I've made this for friends and they love it. My husband eats it also. It is easy to make with an easy clean up which I love.
I loved this and was able to freeze it for another night.
I made stuffed shells instead of manicotti shells and the stuffing was the exact amount for one box. I also stuffed and froze some of the shells for future use. Excellent and easy to prepare. Loved it.
