Calico Chicken With Penne

Colorful vegetables are combined with chicken, ham and penne pasta and ready in less than 25 minutes.

Ingredients

8 ounces (2 1/3 cups) uncooked dried penne pasta
8 ounces boneless skinless chicken breast strips
1 small (1 cup) green bell pepper, cut into thin strips
1 small onion, sliced
1/4 pound thick sliced deli ham or smoked turkey, cut into strips
1/4 cup freshly grated Parmesan cheese
6 Roma tomatoes, thinly sliced
1/2 teaspoon salt
Freshly ground pepper

Directions

Cook pasta according to package directions. Drain; keep warm.

Melt butter in 12-inch skillet until sizzling; add chicken strips. Cook over medium-high heat, stirring occasionally, 5-7 minutes or until chicken is no longer pink. Add green pepper and onion. Cover; continue cooking 5-7 minutes or until vegetables are crisply tender.

Add cooked pasta, whipping cream and ham. Cover; continue cooking 3-5 minutes or until heated through. Stir in cheese, tomatoes, salt and pepper.

Another family favorite, delicious and colorful. We prefer the tomatoes a bit cooked, though, so I add them with the cream and the ham.
This turned out to be very good and lends itself quite well to various modifications. For example, I used pre-cooked chicken I had from a previous meal, adding it after cooking the pepper and onion first. It's also very good with a little "heat" or some fresh herbs. I used some chopped fresh rosemary.

Next time, I'm going to add some fresh mushrooms.
this is my quick go to pasta dish we love it
